Classic tomato, basil and feta bruschetta bread

It’s delicious and one of my favourite meals.
It’s quick to prepare with simple, fresh ingredients.
Prep time: 10 mins
Cook time: 8 mins
5 diced tomatoes
1 red onion minced
¼ cup olive oil
1 cup crumbled feta
2 tbsp fresh basil leaves
1 French baguette
2 tsp balsamic vinegar
2 Tbsp extra virgin olive oil
Salt & pepper to taste
Step 1: Roughly chop tomatoes into small cubes and place in a colander or strainer over a bowl to allow excess tomato juice to drain while you prepare the other ingredients. 

Step 2: Finely chop the feta, red onion and basil.  Drain tomato juice and add tomato pieces to dry bowl with onion, basil, olive oil and balsamic vinegar. Stir gently to combine.
Step 3: Cut the baguette in ½ inch slices on a diagonal. Toast them in a 180C oven for about 6-8 minutes. The baguette slices should begin to brown and feel crisp and toasty to the touch. I also add a sprinkle of balsamic vinegar to the top of the bread. Make sure you don’t add too much and make the bread soggy.
Step 4: Then add the basil leaves.
Step 5: Top each baguette slice with a spoonful of bruschetta mixture.
Sprinkle with feta cheese and fresh basil.
Serve immediately otherwise you’ll have soggy bread!
